La Tejana Taqueria

La Tejana Taqueria serves its carnitas only on the weekend — always a good sign that a dish is worth seeking out. The pork is served on the bone, or several bones, and some of the meat you must exert a little effort to extract. The pork is luscious and would be delicious on its own, but you’ll likely fold it into tortillas with diced onion, pickled jalapeño and slugs of salsa. (All three offered here are excellent; I prefer the scorching, tangy salsa verde.) Should you visit La Tejana on a weekday, its traditional taqueria fare is among the best in town, and when the weather turns chilly, its goat soup will warm you, body and soul.
