Fast-casual pizza is everywhere these days. Pie Five Pizza. MOD Pizza. Doughocracy. Chris Sommers, co-founder of Pi Pizzeria, is entering the booming market with ’Zza Pizza its deep-dish pies that skip the sloppiness of Chicago-style deep-dish and, in topping combinations like the Western Addition, flirt with sophistication; its equal facility with deep-dish and thin-crust pizza. Fast-casual chains can certainly take one lesson from Pi. In my experiences over almost a decade, it has always offered a consistently excellent product across its multiple locations.
