The best time to visit Veritas is Thursday, Friday or Saturday evening, and the best place to sit is at the long counter in front of the open kitchen. Here you can watch executive chef and co-owner Mathis Stitt and his team cook your dinner from the “fine dining” menu at this unique restaurant, wine shop and gourmet market in Ellisville. This menu changes often, but expect to find modern American fare both playful (perfectly crisp potato wedges with carnitas-like pork, cheese sauce, artichoke hearts, green onions and tobacco onions, a sort of haute loaded fries) and sophisticated (a gorgeous chicken breast roasted and then seared to finish with vegetables over a lemon-oil puree). A fine burger anchors the more casual “Gateway” menu, available for lunch Tuesday through Saturday and for dinner Tuesday and Wednesday.
