Dave Bailey’s restaurant empire continues to expand. Just since September 2017, he’s opened Hugo’s Pizzeria and the New Orleans-inspired L’Acadiane. Of all his restaurants, I continue to be most consistently impressed with the burger-focused Baileys’ Range. Focused is the key word. There are numerous variations — not simply among the toppings but the patties themselves, with bison, lamb and chicken also available — but the kitchen never loses sight of the patty’s proper seasoning, texture and, crucially, temperature. Add great fries, a fine selection of local craft beer, and ice cream and milkshakes, and Bailey’s most straightforward recipe is also his best.
