Bolyard's Meat & Provisions
Bolyard’s Meat & Provisions is a butcher shop first and foremost — and a great butcher shop at that, with a commitment to whole-animal butchery — so I didn’t consider it eligible for the first two editions of the STL 100. But before Chris Bolyard was a butcher, he worked for Kevin Nashan at the great Sidney Street Café, and his namesake shop now serves a small daily menu featuring sandwiches with roasted pig head, braunschweiger, bologna and other meats. Stop for lunch and pick up something to cook for dinner.
Hours: Lunch 11 a.m. until sold out, Monday-Saturday (store open 11 a.m.-7 p.m. Monday-Friday, 10 a.m.-7 p.m. Saturday)
